This little recipe started out as an Anchor Porter clone recipe at Don's Homebrew Log in my links at the right. We wanted to make a tasty porter and it seemed like a good place to start.
Also, being a partial mash recipe it had the potential to be very good, as this is only a step below brewing all grain. After talking to the homebrew shop however we switched the amounts of
chocolate and black patent malts to make it more of a classic Porter. Also the Cascade hops were moved up to 15 minutes, and on impulse during brewing we threw in some Columbus hops
at 30 minutes. Hey, stone would do it. So we now have this 51 IBU, 6.1% ABV Porter conditioning in secondary. Fermentation went well, and it got down to 1.020 FG from a start of 1.067 OG. Already tasted great after primary fermentation, and with time the bitterness and hop aroma will mellow, while the malts blend a little better. Tastes quite nutty, and roasty with some lingering bitterness. It's not in the promash report unfortunately, but we also used Irish Moss in this beer as we probably will in most all of them.
Done and done. Turned out great. Took awhile to really mature but it's amazing. Quite chocolately and roasty and might be one of the better porters I've ever had. Not just because I brewed it either. It's no Stone Smoked Porter (how do you beat that?) but it's really drinkable and fun.
